Crazy for Cauliflower Rice

There's been a cauliflower rice craze lately, and for good reason! The neutral flavor of cauliflower makes it an easy vegetable to pair with a variety of other vegetables, protein and seasonings. Cauliflower has been a staple in my diet for the past year or so. I love it because as someone with a hefty appetite, I can eat a big plate of it for less than half the calories of regular grain rice. 1 cup of cooked cauliflower rice has about 25 calories, where as 1 cup of cooked brown rice has about 200 cal. It also has 5g of carbs per cup, compared to ~40g of carbs per cup of brown rice. Cauliflower is also rich in Vitamins "C" & "B" and fiber, and provides antioxidants and phytonutrients that can help ward off cancer.


I've decided to share my two favorite cauliflower recipes with you all since I love them so much. I hope you will too!



 

1. Fajita Egg-Fried Cauliflower Rice


Ingredients:

  • 340g (1 package) Trader Joe's frozen cauliflower rice

  • 1 red bell pepper chopped

  • 1/2 cup yellow onion

  • 2 cups baby spinach

  • 200g egg whites

  • 28g Trader Joe's Light Mexican Blend cheese

  • cumin

  • salt

Optional:

  • Salsa

  • 2 Tbsp light sour cream

  • pickled jalapeno peppers


Instructions:

  1. Coat large skillet w/ coconut oil on medium-high heat.

  2. Add frozen cauliflower rice, bell pepper & onion. Cook until onion and peppers are tender and cauliflower is fluffy.

  3. Pour in egg whites, cheese, and seasonings into skillet & cook for about 5 minutes until egg whites become firm.

  4. Move to plate and top with optional sour cream, salsa and jalapeno peppers.

  5. Enjoy!

Protein: 38g

Carbs: 33g

Fat: 9g

2. Spanish Cauliflower Rice with Chicken


Ingredients:

  • 340g (1 package) Trader Joe's frozen cauliflower rice

  • 150g cooked chicken breast

  • 200g green zucchini squash

  • 1 tsp garlic

  • 1/2 cup yellow onion

  • 8 oz diced tomatoes

  • 4 oz diced green chiles

  • 2 Tbsp tomato paste

  • 1 Tbsp olive oil

  • cumin

  • chili powder

  • salt


Instructions:

  1. In a large skillet, saute onion in olive oil over medium heat until tender.

  2. Increase heat to medium-high and add in frozen cauliflower rice, zucchini, garlic, tomatoes, green chiles, tomato paste, cumin, chili powder & salt. Saute until cauliflower is fluffy.

  3. Add in chicken breast and combine.

  4. Enjoy!
